Dinner #6: Texan Ranch Chicken Casserole

I personally have not made this yet, but I found this in my mom's refrigerator while I was visiting her and it was stellar. I had about 3 helpings for lunch one day... This is a good freezable recipe, which is something I've been wanting to do more of. My mom had made this ahead of time and my dad, or whoever was home, threw it in the oven. It was seriously delicious - I'm pretty excited to make it for Jeff!

About Us...

Jeff and I met in Provo, UT on May 1, 2006 playing volleyball on Stadium Terrace’s humble sand volleyball court. A few weeks later we started dating and now we’ve been married for 5 years! We both graduated from BYU in April 2009 and moved to Denver shortly thereafter. We have an adorable, talkative, three-year-old boy, Austin, who keeps us entertained and loving life. Jeff finished graduate school at the University of Denver in 2010 and started a job as an auditor with the public accounting firm McGladrey in November 2010. I have the pleasure of being a stay-at-home mom and am so grateful that I am able to be with Austin all day.
