Dinner #4: Easy Chicken Alfredo (w/ cottage cheese base)

I'm already falling behind and it's only been a month...
A couple weeks ago I made a basic alfredo sauce using a cottage cheese base (instead of cream cheese).  I had about a cup of cottage cheese that I didn't want to go bad so I went to allrecipes.com and typed 'chicken' and 'cottage cheese' in the ingredients list.  The following recipe is what I got:

It's a "Lite" recipe and tasted good.  I don't know that I will make it regularily, but it was a great use for my leftover cottage cheese and it's always nice to have a lighter calorie alternative.

G-Rocks Funeral


My Granddad Loucks (aka G-Rock, Jungle Jerry, El Presidente, Raldo, Raldman) passed away this past Veteran's Day, November 11, 2011.  He'd been suffering from Alzheimer's for a few years and was ready to move on.  This was one of the first 'losses' I've experienced in my family, and though I felt like it was beyond his time since he'd been uncomfortable for so long, it is never easy to lose someone you love.  I cried the day my Dad called me, especially since it was Veteran's Day and all the cute old men were passing out flowers at the grocery store.  There were plenty of happy tears too.
A week later we held a funeral for him in Cedaredge, Colorado - where he and his wife grew up and grew old.  Cedaredge is one of my most favorite places and one of the most beautiful I've ever been to.  It was nice to go back and visit a place with so much memory and meaning to our family.

All of my brothers were able to make it to the funeral.  It was nice to have all of our immediate family together for a few days.  We played games, and went to my Grandparents house to hike the over-grown trail and run through the cherry orchard.

Granddad's funeral was amazing. I know that may sound weird, but it truly was a celebration of his life. The congregation was crying and laughing and it was great. After the eulogy they opened the mic for anyone to come share memories or thoughts. Both my parents, my uncle, all four of my brothers and myself and several others got up to share our favorite memories and things we'd learned from our Father, Grandfather, Uncle, and friend. 
A common theme to his life was how great of a worker he was. He worked from a child in the Depression to a young man serving his country to a husband and father of three to an extremely successful petroleum geologist. He knew how to work hard and taught each of us to work hard too.
Another recurring theme, especially from my immediate family was that he and his wife brought generations and hundreds of people to the Gospel of Jesus Christ. He and my grandmother joined the church in Canada when my father was about 3 years old. Because of their faith in Christ they raised a family in the church which led to my mother being baptized when she was 19. Now they have 5 grandkids, 4 of which have served full-time missions, that have families that are active in the church. Several years ago we made a map showing my grandparents how many lives they'd blessed (at least the ones we could count) because of their decision to join the Church. It's amazing how one decision can effect the world!

Granddad's passing was a very spiritual experience for our family and I will always cherish it. I love my Granddad so much and am grateful for the numerous blessings he's helped me to acquire. I know he is happy and comfortable now and that he is back at work!

Dinner #3: Calzones with Rhodes Rolls

I've had several Rhodes Rolls coupons in my possession for a long while... like 2 years.  They were about to expire so I went to the grocery store and conveniently enough, Rhodes brand everything was on sale.  I stocked up!  Now we have hundreds of little frozen rolls so I've been trying new things with them.

These calzones were incredible.  We used whatever we had around as filling.  (Spaghetti sauce instead of pizza sauce, string cheese instead of shredded mozzarella, etc.)  They turned out fabulous - we've already made them twice!

Dinner #2: BBQ Jack Chicken

This was tasty chicken and cooked really fast, I was shocked.  It's only 3 ingredients, so simple! Jeff said he'd definitely eat it again. :)

Funny Austinisms

I have a portion of our blog dedicated to funny things Austin says, but these next three quotes came back to back and I just had to share them as a formal post.  I've been buying drapes and curtain rods and have had a towel rod ready to put up for over a month now.  I finally pulled out the drill, screwdriver, level, hammer, stud finder and tape measure to put up this little towel rod today.

Austin gets so excited when we do work around the house - he loves tools!  (He got a cute set for Christmas that he loves 'fixing' things with).  I let him play with the tape measure and and stud finder while I was working.  He pushed the button on the stud finder multiple times and said, "Wow!  This tape measure (the tape measure was in his other hand) makes beautiful song!"  A few minutes later I was finished hanging the rod and he tells me, "Mommy hang the towel trod!"  And just a moment after that he picked up his toy hammer and hammered the doorknobs in our bedroom, "I hammer the ding knock..."

52 New Dinners in 2012

A friend of mine decided she was going to try one new meal each week last year and write about it on facebook.  I mentioned this to Jeff the other day thought it would be something fun for us to try this year! When we were living in Provo we tried to make something new at least once a month and it was very beneficial - many of those recipes are our weekly staples today. 
My goal is to make something new each week and write a brief post on how we liked/didn't like the meal.  If the recipes are deemed worthy to replicate for meals in the future I will post them on the Mitchell Family recipe blog which I've been meaning to contribute to more anyway!
With the first week of 2012 underway I have tried a new recipe and am ready to share...

Turkey (or Chicken) Pot Pie with Lion House Pie Crust
This came from a good friend of mine (different from the friend with this fabulous 52 dinners idea) from our new ward in Centennial.  (We've acutally already made this twice because it's so yummy... the first time was a couple days after Christmas and the second time... a few more days after Christmas, New Year's Day!)

"Big Boy" Bed

We finally decided to convert Austin's crib to a toddler bed.  I put it together yesterday before bed time and once it was "fixed" Austin couldn't get enough of his new bed.  He didn't want to play with toys, say prayers, anything!  (I have a really cute video clip but it won't load...)

He slept great last night and didn't fall out.  He's currently taking a nap and I haven't heard him get up to play with toys or anything yet... good sign I'd say!
